Ingredients 4 eggs
2 Tblspn mayo
3 teaspn curry powder
salt and pepper to taste
1. 3/4 fill a saucepan with hot water then bring to the boil
2. Lower the 4 raw eggs into the boiling water and cook for 11 min
3. Strain eggs then run under cold water when cool enough to hold peel eggs ( you must do this quickly to stop eggshell sticking to the egg
4. Cut egg length ways in half
5. Scoop out egg yolks into a bowl
6. Mix mayo and curry powder and egg yolks together add pinch of salt and pepper
7. Scoop mix back into eggs and serve on a bed of greens (mescline) and cherry tomatoes
